While we produce a large array of wines, they are all made in small volumes, each expressing a unique sense of place and balance.

Our flagship wines are named Ghost Gum, after the enormous, ancient gum tree which grows in Joy and Nigel’s garden on the farm. These wines are the ultimate expression of our Bo-Hoek terroir and reflect a strong sense of place and passion.

We have selected only the best Chardonnay and Cabernet Sauvignon vineyards from the farm for our Ghost Gum wines as we feel these are the two grape varieties which best express our terroir, and we only produce the Ghost Gum White and Ghost Gum Red in very limited quantities from rigorously selected grapes and barrels.

Lyle Cap Classique 2021

Fresh and clean aromatics with minerality and bright notes of lemon and lime. Elegant and complex, with vibrant acidity, focus and a dry finish.


Cellar this Cap Classique for five to twelve years to allow maximum character development and enjoyment.

Cap Classique produced entirely from estate-grown Chardonnay grapes. Only the cuvée fraction of pressed juice was used to ensure the purest and most elegant bottled product. Matured on the lees for 40 months before degorgement and dosage.

The J 2025

The palate is focussed, yet layered, with pronounced minerality that lends tension and precision. Stone fruit flavours unfold with a savoury, almost saline continuity, complemented by well-integrated oak tones of charred wood and almond husk. The texture is firm and structured, with a long, spice-laced finish that shows off the wine’s aging potential. This is a serious, contemplative white that rewards time in the glass, ideal for pairing with spicy dishes or hard cheeses.

This distinctive white blend from our estate composed of 69% Viognier and 31% Sémillon, offers a complex and compelling profile. Fermented partially in amphora and French oak hogsheads, the wine strikes a balance between traditional texture and modern purity. On the nose, it opens with austere aromas of grilled pineapple and white peach, underpinned by toasted nuts and subtle oak notes. There’s a shy, confected edge – dried mango or candied citrus that adds intrigue without overwhelming.

Ghost Gum White 2025

Bright citrus zest and white peach are at the forefront of the nose, layered with a more defined expression of well-integrated French oak, bringing subtle vanilla spice and a delicate creamy note. A fine flinty minerality underpins the aromatics, adding tension and intrigue.


The palate is vibrant and composed, showing concentrated flavours of lemon curd, ripe pear and stone fruit, all carried by fresh, well-balanced acidity. The oak contributes structure and savoury depth without overshadowing the fruit, leading to a long, precise, and gently saline finish.

Ghost Gum White is our flagship white wine, made up entirely of Chardonnay from one unique vineyard on Stony Brook. 100% barrel-fermented in 65% new French oak barriques and matured for 12 months, this wine is supremely focussed, highlighting the brightness of Chardonnay grown in Franschhoek’s Bo-Hoek.

Per Ara Rosé 2026

The Tempranillo grape has become synonymous with Stony Brook, and we felt that it was only fitting to show a lighter side of this usually rich and brooding red variety. As the only wine in our range not requiring significant aging to reach optimal drinking, the Catalan phrase ‘per ara’ translates into English as ‘for now’.


The grapes were whole-bunch pressed for a beautiful pale pink appearance, then fermented in stainless steel. Three months of lees contact were allowed to develop a subtle richness in the mid-palate. A refined and refreshing rosé, ideal for warm afternoons or paired with light Mediterranean fare.

Shiraz Mourvèdre Viognier 2021

Black and white pepper with muted red fruit and allspice on the nose. There is a finely balanced structure and subtle interplay between the acidity and ripe tannins. Delicate plushness in the long, dry finish with just a hint of oak.

The Shiraz (62%) and Viognier (2%) grapes were co-fermented with 30% whole cluster, carbonic macerated grapes to freshen up and give additional spice and fragrance to the wine. The Mourvèdre (36%) was picked very ripe to allow soft, round tannins to be extracted during fermentation in stainless steel. After fermentation, the two components were taken to 15% new French Oak barriques for natural malolactic fermentation and maturation, where the wine spent 24 months before a light filtration and bottling.

Camissa 2022

A deeply expressive Bordeaux-style blend, showing brooding aromas of blackcurrant, blackberry and dark plum. Layers of toasted oak and subtle savoury notes add complexity, while hints of toast and spice give further intrigue to the nose. The palate is rich and concentrated, with inky dark fruit throughout. Fine, softly textured tannins provide structure and grip without sacrificing elegance. Savoury undertones and subtle oak contribute depth and complexity, resulting in a long, dry finish accented with lingering notes of dark fruit and toast.


Camissa is the old Khoisan word for ‘the place of sweet waters’. This is a wine that is only produced every few years and its blend changes each time. The 2022 vintage is made up of only Franschhoek-grown fruit; 82% Cabernet Sauvignon and 18% Petit Verdot – all matured in 30% new French oak barriques for 24 months.

Syrah Reserve 2022

The grapes for our Syrah all come from two very special, low-yielding blocks on our farm. After harvesting, 70% of the grapes were carefully destemmed, while the remaining 30% were added to the tank as whole clusters. 24 hours of pre-ferment maceration were carried out before inoculating. After a cool fermentation, the grapes were pressed off and settled before taking the wine to 30% new French Oak barriques for 24 months.

The Max 2021

This bold blend delivers power and poise in equal measure. Deeply aromatic, the wine offers an intriguing bouquet of crushed geranium, violet, and dark berry fruit, lifted by a cool streak of spearmint.


The unique mesoclimate at Stony Brook seems naturally suited to growing red Bordeaux varieities. There is plenty of sunshine to allow the grapes ample ripeness, while the cool night-time temperatures seal in the acidity and increase the potential for hangtime on the vine. With each vintage of The Max, the aim is to craft a wine that has huge ageing potential as well as rich, harmonious flavours that allow the wine to be enjoyed in its youth. The 2021 vintage is a two-way Cape Bordeaux-style blend, made up of 60% Cabernet Sauvignon, and 40% Petit Verdot, matured in 50% new French oak barrels for 24 months before blending and bottling.

Cabernet Franc 2020

Grown on Franschhoek’s Dutoitskop Peak, this Cabernet Franc was hand-picked and carefully sorted before being lightly destemmed and cold macerated in stainless steel. After primary fermentation, a wild Malolactic fermentation took place in second-fill 300 litre French Oak barrels, where the wine was matured for 21 months before a light filtration and bottling.

Ghost Gum Red 2022

The nose is captivating; rich layers of dark red fruit and cassis are intertwined with luxurious notes of dark chocolate, sweet oak, and toasted cedar. Floral hints of hibiscus lift the already alluring aromatic profile. On the palate, the wine is vibrant and structured, with bright acidity that shows off the fruit and balances the plush, velvety tannins. The oak is assertive but wonderfully integrated, enhancing the wine’s texture without overshadowing its purity. Long and focused on the finish, this Cabernet offers a harmonious interplay of power and finesse. Built for longevity, it will gain complexity and depth over the next 15 to 20 years.


Two blocks of Cabernet Sauvignon grown on Stony Brook make up the complementary components for this exceptional wine. Extremely well drained soils ensure maximum concentration and intensity. The bunches were harvested by hand at full ripeness, before being hand-sorted and cold macerated for 4 days. The individual berries were fermented in stainless steel, receiving four pumpovers a day. After pressing, the wine was transferred into 80% new French oak barriques, where spontaneous malolactic fermentation and a further 26 months of maturation took place.

Ovidius Tempranillo 2021

The name pays homage to the Roman poet, Ovid, who is quoted on the front label of this wine: “Chance is always powerful. Let your hook be always cast; in the pool where you least expect it there will be a fish.”
The nose is robust with generous, ripe dark fruit; black cherry and rose. The oak plays an important supporting role, both with the aromatics and the palate. The wine is bold and rich, but at the same time bright and effortlessly structured. Firm, savoury tannins lead into a remarkably long, textured finish. Cellar for up to 20 years from vintage.

Tempranillo has become an absolute revelation for Stony Brook. As we learn more about this scarce grape each year, the wine seems to become more and more refined. Harvested in early February, each bunch was meticulously hand-picked, hand-sorted and destemmed before a 4 day pre-ferment cold soak. The wine was taken to 70% new oak barrels for malolactic fermentation and maturation for 24 months before bottling. 2021 was a spectacular vintage for this wine.
